Parsley: This refreshing herb is good for your breath and is apparently refreshing to the rest of your body. Like all green herbs, it is loaded with chlorophyll, which is just good for people. It helps you build tissue and fight inflammation. It has even been shown to help manage blood sugars and helps to keep your weight in check. More studies are needed, but it may even help to fight cancer. All that, and a breath freshener too? Who could ask for more?

Herbed French Dressing

  • 2 tablespoons wine vinegar
  • 1/2 teaspoon Dijon-style mustard
  • 1 dash olive oil, or to taste
  • 1 1/2 teaspoons minced fresh parsley leaves
  • 1 1/2 teaspoons minced fresh chives
  • 1 1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried
  • 1 1/2 teaspoons minced fresh chervil or 1/2 teaspoon dried


In a bowl combine the vinegar, the mustard, and salt and pepper to taste, add the oil in a stream, whisking, and whisk the dressing until it is emulsified. Stir in the parsley, the chives, the tarragon, and the chervil.
