Parsley: This refreshing herb is good for your breath and is apparently refreshing to the rest of your body. Like all green herbs, it is loaded with chlorophyll, which is just good for people. It helps you build tissue and fight inflammation. It has even been shown to help manage blood sugars and helps to keep your weight in check. More studies are needed, but it may even help to fight cancer. All that, and a breath freshener too? Who could ask for more?

Herbed Brown Rice

ingredients

  • 1 quart water
  • 1 1/2 cups long-grain brown rice
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon coarsely chopped flat-leaf parsley
  • 2 teaspoons coarsely chopped cilantro

directions

In a 2 quarts heavy saucepan bring 1 quart water, seasoned with salt and pepper, to a boil. Stir in rice, cook, covered, over moderately low heat until water is completely absorbed, about 40 minutes.

Remove from the heat, fluff with a fork. Stir in chopped parsley and cilantro. Taste and adjust for seasoning. Serve immediately.
